10 Nut-Free Cookie en Cake Recepten

Als u geen heerlijke nootvrije koekjes en cakes wilt missen en als u ook suiker wilt vermijden, is deze gids de perfecte. 1. Nut-free dubbele chocoladekoekjes

Ingrediënten voor 20-cookies:

Voor de rest:

  • 3 / 4 beker glutenvrij bloem voor alle doeleinden
  • 1 / 4 beker cacaopoeder
  • 1 / 2 theelepel bakpoeder
  • 1 / 4 theelepel zout
  • 1 beker chocoladeschilfers
  • 1 / 4 beker plantaardige melk
  • 1/3 cup sunflower seed Butter
  • 1 theelepel vanille-extract

1. Verwarm de oven voor op 350 graden Fahrenheit.

2. For flax egg, in a bowl, add ground flax seed and water and stir. Let sit for 5 to 10 minutes.

3. Meanwhile, in a bowl, add flour, cocoa powder, baking powder and salt and stir.

4. In a double boiler, melt half of the chocolate chips. Transfer to a bowl and add sunflower seed butter and mix.

5. Add milk, flax egg, and vanilla extract and stir.

6. Add the wet mixture from step 5 to the dry mixture in step 3. Fold in remaining chocolate chips.

7. With a 1-tablespoon measure, portion cookie dough into round shapes and place on lined baking tray. Bake for 12 to 14 minutes. Let cool.

2. Nut-Free Ultimate Allergy-Friendly Cookies

Ingrediënten voor 12-cookies:

  • 1 tablespoon chia seeds
  • 3 eetlepels water
  • 50 grams raisins
  • 125 grams tahini
  • 2 tablespoon water
  • 1 theelepel vanille
  • 1 / 2 theelepeltjekaneel
  • 6 eetlepel kokosmeel
  • 1 theelepel bakpoeder

instructies:

1. In a bowl with a 1 tablespoon of water, add chia seeds and let soak for 15 to 20 minutes or until they start to gel.

2. Verwarm de oven voor op 360 graden Fahrenheit.

3. In a food processor, add raisins, tahini and remaining water and process.

4. Add remaining ingredients and soaked chia seeds and process until the mix is sticky.

5. With wet hands and a wet spoon, take spoonfuls of the mixture, roll into balls and place on a baking paper lined tray.

6. With a wet fork, press balls down.

7. Bake for 8 to 10 minutes.

3. Nut-Free Applesauce Cookies

Ingrediënten voor 12-cookies:

  • 1 cup unsweetened applesauce
  • 3/4 cup chopped dates
  • 1 / 3 kopje rozijnen
  • 1 cup old fashioned oats
  • 1/2 cup oat flour
  • 1 theelepel kaneel
  • 1 / 2 theelepeltje gember
  • 1 theelepel vanille-extract
  • 1 tablespoon melted coconut oil

4. Nut-Free Quinoa, chocolate chip and banana cookies

Ingredients for 8 to 10 cookies:

  • 1 and 1/2 cups cooked quinoa
  • 1 / 2 cup bloem voor alle doeleinden

  • 1 / 2 cup chocolade chips

4. Add quinoa and flour slowly. Add chocolate and mix.

5. Form 2 tablespoons of the mixture into cookie and place on baking sheet. Repeat with remaining mixture.

6. Bak voor 15 minuten.

7. Remove from oven and let cool.

5. Nut-Free Banana blueberry cookies

Ingrediënten voor 15-cookies:

  • 2 ripe peeled and mashed bananas
  • 1/2 teaspoon vanilla
  • 1 / 2 theelepeltjekaneel
  • 2 tablespoon ground flaxseed
  • 1 and 1/2 cups of oats
  • 3 eetlepels gesmolten kokosolie
  • 1 kopbessen

instructies:

1. Verwarm de oven voor op 350 graden Fahrenheit.

2. In a bowl, add bananas, vanilla, cinnamon and flax and stir.

3. Place parchment paper on baking sheet.

4. Take 1/4 cup of mixture, flatten slightly and place on baking sheet. Repeat with remaining mixture.

5. Bake for about 15 to 20 minutes or until cookies are golden brown.

6. Serve hot.

6. Nut-Free Banana cake

Ingredients for 6 to 8 slices:

  • 125 g self-raising wholemeal flour
  • 1 / 2 theelepel bakpoeder
  • 2 theelepels gemalen kaneel
  • 75 grams sultana
  • 50 grams melted butter
  • 2 teaspoons vanilla essence
  • 1 ei
  • 1 eetlepel melk
  • 3 ripe mashed bananas

instructies:

1. Preheat oven to 180 degrees Celsius. Grease and line a 450 g loaf tin with baking parchment.

2. In a bowl, add flour, baking powder, cinnamon and sultanas and mix. In another bowl, add butter, vanilla essence, egg, milk and mashed bananas and mix. Pour second mixture into first mixture and mix.

3. Pour mixture in tin and bake for 30 to 40 minutes or until a skewer inserted in the middle of the cake comes out clean. Remove from oven, let cool in tin for 10 mins and remove from tin.

7. Nut-Free Chocolate cake

Ingrediënten voor 6-porties:

  • 200 grams unsweetened baking chocolate or at 70% cocoa
  • 1 tablespoon unsweetened cocoa powder
  • 1 / 2 theelepel bakpoeder
  • 200 grams pitted dates
  • 3 grote eieren
  • 1 / 4 kopje kokosolie
  • 1 theelepel vanille-extract

instructies:

1. Verwarm de oven voor op 350 graden Fahrenheit.

2. In food processor, add chocolate, cocoa powder an baking soda and pulse until texture is like coarse sand.

3. Add dates, eggs, coconut oil and vanilla and pulse.

4. Transfer mixture into a 20 x 20 cm baking dish.

5. Bake for around 25 minutes or until a toothpick inserted in the cake comes out clean.

8. Nut-Free Carrot cake

Ingrediënten voor 6 tot 8 porties:

For the cake:

  • 3 eieren
  • 1 to 2 bananas
  • 10 to 15 seeded dates
  • 6 tablespoons sunflower oil
  • 1 cup whole wheat flour
  • 1 and 1/2 teaspoons baking powder
  • 3 theelepels kaneel
  • 1 / 2 theelepel nootmuskaat
  • 1/2 teaspoon cardamom
  • 3 to 4 medium-sized grated carrots
  • 1/2 cup coconut flakes
  • 1 / 2 kopje rozijnen

For the glazing:

  • 200 grams cream cheese
  • 3 tablespoons honey (or use bananas or dates as sweeteners)
  • sap van 1 / 2 lime

1. Verwarm de oven voor op 350 graden Fahrenheit.

2. In a bowl, whisk eggs.

3. In a bowl, add bananas, dates and oil and blend into a thick cream. Add flour, baking powder, cinnamon, nutmeg and cardamom and stir. Add eggs and mix. Add carrots, coconut and raisins and mix everything together.

4. Pour mixture into a cake pan and bake for around 40 minutes or until a skewer inserted in the middle of the cake comes out clean. Let cool.

5. In a bowl, mix cream cheese and fruit sweetener. Add frosting to cake when cake is at room temperature.

9. Nut-Free Lemon mug cake

Ingredients for 1 cake:

  • 1 ei
  • 2 eetlepels citroensap
  • 2 tablespoons heavy cream
  • 1/2 teaspoon lemon liquid stevia
  • 2 tablespoons coconut flour
  • 1 / 4 theelepel bakpoeder
  • zout

instructies:

1. In a bowl, add egg, lemon juice, cream and stevia and mix.

2. Add coconut flour, baking powder and salt and stir.

3. Pour mixture into a mug.

4. Microwave for around 1 minute or until a toothpick inserted in the middle of the cake comes out clean.

10. Nut-Free Cheesecake

Ingrediënten voor 10-porties:

For the crust:

  • 1 cup softened/liquefied coconut cream concentrate or coconut butter
  • 1/2 cup shredded coconut
  • 1 / 4 cup kokos meel
  • 1 theelepel vanille-extract
  • 1 teaspoon orange extract
  • 1 / 8 theelepel zeezout
  • 1/4 teaspoon liquid stevia

For the filling:

  • 6 cups coconut cream or coconut milk
  • 1 cup virgin coconut oil
  • 1 eetlepel citroensap
  • 1 tablespoon lemon zest
  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon liquid stevia
  • 1 tablespoon vanilla extract or 1 rounded teaspoon vanilla bean powder
  • 1 / 4 theelepel oranje extract
  • 1 / 4 theelepel zeezout
  • 4 tablespoon grass-fed gelatin

instructies:

For the crust:

1. Verwarm de oven voor op 350 graden Fahrenheit.

2. Over low heat, warm coconut butter until smooth and liquid.

3. In a bowl, add coconut butter and remaining ingredients and mix.

4. Press dough into baking dish until it covers the bottom.

5. Bake for 10 to 15 minutes until lightly browned.

6. Remove from oven and let cool to room temperature.

For the filling:

1. In a pan, add all ingredients except gelatin.

2. Heat over low until slightly warm.

3. Slowly sprinkle gelatin while whisking vigorously.

4. Transfer mixture to a bowl.

5. Place in fridge for an hour.

6. When crust is at room temperature, pour mixture into crust and chill completely.

7. Top with jam or fresh fruit.
